Ingredients
- 2 pounds ground chicken
- 2 eggs
- 1/2 cup panko breadcrumbs
- 23- to 25-ounce jars of marinara sauce
- 1/3 cup fresh parsley or basil leaves, coarsely chopped & more for serving
- 1/2 cup yellow onion minced
- 3 cloves garlic, minced
- 1/3 cup Parmesan cheese, finely grated & more for serving
- 2 cups mozzarella cheese shredded & part-skim
- 1 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon kosher salt
Method
Pour half of the marinara sauce in a 6 quart or large slow cooker. Keep it aside. Now place the eggs in a big bowl and whisk it with a fork to break them up. Add the parmesan, panko, parsley, basil, garlic, oregano, pepper, salt, and stir evenly to combine and moisten. Now add the ground chicken and mix them well.
Now fill the bowl with water and make the meatballs. Place it in the sauce and pour the remaining sauce over the meatballs. Cover and cook it on low setting until cooked through. Sprinkle mozzarella cheese and parsley or basil more if needed.
